You know how hard it was to get Chinese food back in the 'Burg? There wasn't any! I can't remember the first time I had good Chinese Food. There was none. It was Chinese Polynesian food with Moo-Goo-Gai-Pan and Moo-Shoo-Ro all with extra MSG at places like the "Ming Gardens." The drinks all came with red umbrellas unless you got a Tiki Bowl. These bowls had about a gallon of liquid and all kinds of stuff floating in it (pineapple slices, maraschino cherries, lemos wedges, anything!)
In the early 70s with Nixon / Kissinger / China in the news Central Jersey moved into the new ages with a place called "A Kitchen." Originally this was a small take-out business run out of Sam's BP filling station, up on the Brunswich Pike. I think it was by Monmouth Junction. Sam served really incredible food in that place, and it wasn't fancy or expensive. You ate at picnic tables which were positioned over the grease racks in the service bays.
The food was eventually discovered by food critic Ray Sokolov of the New York Times and the place immediately went stellar. In a month's time it took you three months wait to get in.
Sam moved to a place in a house in Franklin Park that could seat hundreds. It was still great food, and I was told it was the only authentic Chinese food in the area.
It now looks like more Chines joints are in the 'Burg than Italian joints.
Times have changed.
